Have a craving for Mexican? We all know that Nachos can be very tempting and it can be hard being good. Next time you are at an outdoor bar-b-q or even a tailgate try this healthy twist to a family favorite.
Sweet Potato Nachos |
1 Sweet Potato sliced thin
1 tbsp avocado oil
1/4 cup jalapeno cheddar cheese
Chopped red and green peppers
Chopped red onions
Romano beans (or black beans)
DIRECTIONS:
1. Preheat oven to 400F
2. Cover sweet potato slices with Avocado oil,
3. Place on baking sheet and bake for 20 minutes.
4. Remove slices from the oven, Top with cheese, onions, peppers, beans.
5. Cook for another 10 minutes in the oven.
6. Top with plain Greek yogurt, salsa and avocados (optional)
