Feta Stuffed Chicken |
Ingredients:
1 tsp dried tomatoes
4 skinless, boneless chicken breast (1-1 1/2 pounds total)
1/4 cup crumbled feta cheese (1 oz)
2 tsp fat-free cream cheese (1 oz)
2 tsp fresh basil or 1/2 tsp dried basil
1 tsp olive oil
dash of pepper and sea salt
Directions:
1. Preheat oven to 400F
2. Place dried tomatoes in a small bowl. Pour enough boiling water over the tomatoes to cover. Let stand for 10 minutes. Drain and pat dry, set aside.
3. Cut a pocket in each chicken breast by cutting horizontally through the thickest portion, set aside.
4. In small bowl, combine feta, cream cheese, basil and tomatoes. Spoon about 1 rounded tsp into each pocket. If necessary secure openings with wooden toothpicks. Sprinkle chicken with pepper and salt.
5. Bake stuffed chicken for 20-25 minutes or until tender and no longer pink.
6. Serve hot, makes 4 servings
