Buffalo Chicken Stuffed Peppers

Buffalo Chicken Stuffed Peppers


Ingredients: 
4 chicken breasts
4 medium-large sized peppers
1 sweet potato
2 tbsp avocado oil or olive oil
Favorite low sodium hot sauce


Directions:
1. Heat pan and oil on the stove
2. Preheat oven to 400F
3. Cook chicken breasts on stove until fully cooked.
4. Once chicken is cooked, let cool and use a fork to shred apart the chicken
5. Place chicken in bowl and mix with your favorite low sodium hot sauce.
6. Chop sweet potato and cook in microwave for 3-4 minutes then mix buffalo chicken with cooked       sweet potato.
7. Cut top of peppers off and clean out pulp and seeds. Fill with chicken sweet potato mixture
8. Bake for 10-15 minutes
