Quinoa Crusted Chicken Strips |
Ingredients:
2 chicken breasts
1/2 cup quinoa (uncooked)
1 egg
1/4 cup gluten free flour
1 tsp oregano
Pinch of salt
Directions:
1. Preheat oven to 400F
2. Place uncooked quinoa in food processor and mix until it is broken up but not completely powder.
3. Take 3 small bowls. Place gluten free flour in the first bowl, egg white in the second bowl and quinoa crumbs, oregano and salt into the third bowl. I discovered that by combining the flour and quinoa I only used 1/2 cup total so I allocated only one yellow.
4. Cut chicken breasts into strips, then coat each strip in flour, then egg, then quinoa and place on a greased baking sheet.
5. Cook in oven for 10-12 minutes.
