It is rainy and cold here and I really want comfort food. My first thought was yellow rice so I decided to make this family favorite the 21 Day Fix way. I know that I would have 1 protein (red) and 1 carbohydrate (yellow) but I wanted to get in another veggie (green). I added English peas to the rice and chicken then smothered okra...yum yum.
