Post Workout Sweet Potato Brownies

Sweet Potato Brownies

Ingredients:

2 large sweet potatoes, skin removed
1/2 cup quinoa flour or oat flour
1 zucchini, grated
1/2 cup cocoa powder
1.5 tsp baking powder'2 eggs
3 egg whites
1/3 cup raw organic honey

Directions:

1. Preheat oven to 415 F
2. Bake potatoes approximately one hour or until they're soft. Allow to cool to room temperature
3. Preheat oven ti 350 F
4. Mash sweet potatoes into a large mixing bowl. Add all remaining ingredients and mix thoroughly.
5. Evenly divide batter into a muffin pan. Bake for approximately 30 minutes.
