Shakeology Lemon Bar

Looking for a creative spin on your Vanilla Shakeology? Try these yummy lemon bars that are packed with protein. The below recipe make 4 servings and take the traditional lemon bar to a whole new level.



Ingredients:

CRUST
1/2 cup oats
1 lemon Quest Bar
1 tbs coconut oil
1 tsp almond milk
1 tsp Stevia

TOPPING
1 lemon
2 eggs
1 tbs Vanilla Shakeology
1 tbs flour, 1 tbs honey
1 tbs Stevia


Directions:

For the base, put 1/2 cup oats in food processor and blend till it turns to flour. Cut up 1 lemon Quest bar into small pieces and slowly add to the oat flour while blending. Add 1 tbs coconut oil, 1 tsp almond milk, 1 tsp Stevia and blend some more to form a crumbly dough. Press into the bottom  a small 4"x 4" tin. Bake at 350 for 10 minutes.

Prepare topping by blending together juice from 1 lemon, 2 eggs, 1 tbs vanilla Shakeology, 1 tbs flour, 1 tbs honey, 1 tbs Stevia. Pour on top of base and bake for an additional 15 minutes. Allow to cool and then cut into 4 squares. Sprinkle with vanilla Shakeology on top or powdered sugar if you want to be traditional.
