Egg and Veggie Cups |
INGREDIENTS
- 8 egg whites
- 1 whole egg
- 1/4 cup chopped red and green peppers
- 1/4 cup onion
- 1/4 cup chopped spinach
- 1/4 cup fresh mushrooms chopped
- Dash of sea salt/pepper
OPTIONAL - Add meat of your choice
INSTRUCTIONS
Mix all ingredients in a bowel or you can layer veggies, meat and eggs.Spray muffin tray with extra virgin olive oil cooking spray or any non stick cooking spray.
Pour ingredients half way to the top for each muffin since the egg will rise.
Cook at 350 degrees for 10 to 15 minutes or until firm.
Let cool for about 5 mins before eating and ENJOY!!! This would be good with cherry tomatoes or even spinach.
